A family favorite recipe inspired by the “Impossibly Easy Cheeseburger Pie” recipe from the Bisquick box. It’s simple, delicious and on the table in 30 minutes!
Camping
Ty, Oakley and I just got back from a camping trip at a nearby State Park. We’re squeezing in as much camping time as possible while the weather is nice before the Texas summer arrives. This was Oakley’s first camping trip where she was able to really enjoy all the fun camping has to offer.
The sun was rising, lightening up our eyelids and waking us with the sound of birds singing. Ty, Oakley and I were in the back of our Sprinter van. The back windows were cracked and a 60* breeze blew across our faces. Sometime in the early morning hours, our 2.5 year old Oakley woke up and wanted to get in bed in between us. I had about 6 inches of room between Oakley and the side of the van and was lying like a board as not to move too much and wake her up. Her head was pressed into my shoulder and her feet were kicking Ty in the belly. I’m not sure how a toddler can turn 90 degrees as if it’s nothing and sleep soundly through it but they can!
Oakley woke up rearing to go while Ty and I were bleary eyed trying to brew our coffee. I’m pretty sure Yeti cups are a gift from heaven to parents of toddlers because it takes about two hours to finish your coffee with a rambunctious little one. We quickly got dressed so we could get outside and let her start exploring.
Ty was starting a fire and Oakley and I got her compact Emmrod fishing pole in the water with a piece of hotdog on the hook trying to catch a perch or bluegill (I actually call these brim but in TX they call them sunfish or bluegill). The hotdog has a funny story to go along with it.
The Hotdog Story
When Ty about 10, he was camping with his family near Flagstaff, AZ. He woke up at daylight and took off by himself up and down the stream with a fishing pole and a shot glass sized jar of salmon eggs trying to catch trout. He was getting a lot of bites but they were just taking his bait. He walked back to camp bummed and his mom said “Ty I’ll teach you how to catch one.” She tore off an inch sized piece of hotdog and put it on an itty bitty trout hook. She was gone about five minutes and came back with a trout. Ty was mad that she caught one and he couldn’t and would have bet a million bucks she wouldn’t have caught one with that big chunk of hotdog.
Anyways,
I set Oakley’s pole on the ground while we got breakfast ready. We hadn’t had any bites the day before so I wasn’t expecting much. Oakley was riding her bike and about an hour later I heard a kerplunk. I figured it was a fish jumping but when I ran to the edge of the lake I saw the pole was in the shallow water. I was taking my boot off and the pole started getting pulled deeper into the water. I was about to run in with one boot on and Ty said “Calm down and take you other boot off first.” Ha Ha, I did not want to lose our first fish or our pole. Oakley ran over and started reeling him in and I quickly figured out this wasn’t a little brim. As we reeled the pole in closer to shore we could see a big ol’ carp on the end of the pole. We got him right to the edge and he flopped around and got off the hook. Oakley didn’t know what to think when that big fish started flopping around. Here’s the video:
Cheeseburger Pie
We grilled hamburgers that evening for dinner and had several patties left over. A cheeseburger pie is the perfect way to use leftover hamburger patties. Just add a little oil to your skillet, break the patties up into small pieces as your would fresh hamburger meat, and sautƩ the meat with your onion.
It’s such a simple recipe and has been on the back of Bisquick boxes for years. I wanted to make this at Mimi’s house and just knew she had Bisquick in the pantry but she was out. So I just flour, baking powder, salt and butter to make a homemade “Bisquick.” It turned out delicious.
Toppings
The toppings are endless. I had some leftover bacon from breakfast so I crumbled that up and sautƩed it with my onion and hamburger. It taste just like a juicy cheeseburger when you serve it with lettuce, tomato, ketchup, mustard, and pickles. Some fried onion strings would also be so tasty.
Double the recipe if you are cooking for a crowd and bake in a 9×13 inch baking dish!
Cheeseburger Pie

A family favorite dinner spin on a cheeseburger and ready in 30 minutes!
Ingredients
1 Pound Ground Beef (I used 90% lean)
1 Onion, diced (I used red onion)
1 Teaspoon Montreal Steak Seasoning (or just salt and pepper)
3 Slices of Cooked Bacon (crumbled) *optional
1 Cup of Shredded Cheese or 5 Slices of Cheese
1 Tomato, sliced *optional
1 Cup of Milk
2 Eggs
1/2 Cup of Bisquick
- Or Make Your Own Bisquick
1/2 Cup of All-Purpose Flour
1 Teaspoon Baking Powder
1/8th Teaspoon Salt
1 Teaspoon of Melted Butter
Directions
- Preheat oven to 400* F.
- If you are using bacon, fry the bacon until almost done, remove from the skillet and crumble into pieces when cooled.
- Brown your beef in the skillet. If you are using leftover hamburger patties, add a bit of oil into your skillet and break them into small pieces and add the meat to your skillet.
- When the beef is almost browned, add the onion and bacon to the skillet and sautƩ until onion is soft.
- While the meat is browning, whisk together the Bisquick (or mix together the Flour, baking powder, salt and butter) with the milk and 2 eggs. Get the lumps out with the whisk.
- Spray a 9-inch pie dish or baking dish with non-stick spray.
- Add the meat mixture to the pie dish.
- Pour the Biquick or flour mixture over the meat.
- Top with sliced tomatoes if using and the shredded or sliced cheese.
- Bake for 25 minutes in the middle of the oven or until the center of the pie is set. Check at 15 minutes and if the cheese is browning too much, cover with foil.
- Serve with toppings of choice like ketchup, mayo, pickles, fried onion strings, tomato and lettuce.

- If you are doubling the recipe use a 9×13 inch baking dish

Will make this in memory of my hubby..He would love it…Never knew what kraut was till I moved to Wisconsin….we were married 2 months short of 60 years so we ate lots of kraut.. sure does look good..
