Cinnamon Fig Chia Pudding

Here is an easy, delicious recipe for Chia Pudding that can be modified to use different fruits to your liking! I love this combination of sweet figs, maple and cinnamon!

I used dried Mission Figs because it’s hard to find fresh figs in store and they are expensive. I’ve tried to grow a few fig trees on the ranch without much luck. Maybe one day… I love how the soaked figs absorbed water and taste more like a fresh fig. Delicious!

You can choose to stir in fresh fruit of your choice right before serving or you can chop up different dried fruits in place of the dried figs. Apricots, dates, raisins, dried cherries, prunes, etc would all be delicious!

I like to layer the chia pudding with a vanilla greek yogurt to up the protein and provide healthy probiotics.

This recipe can easily be adapted for 1 to as many servings as you’d like to make. I make a big batch of it because it can be stored in the fridge for up to 5 days.

Chia Seed Info

  • Chia seeds are the tiny black seeds of the chia plant (Salvia hispanica).
  • Native to Mexico and Guatemala, they were a staple food for the ancient Aztecs and Mayans. In fact, “chia” is the ancient Mayan word for “strength”.
  • Chia seeds contain large amounts of fiber and omega-3 fatty acids, plenty of high-quality protein, and several essential minerals and antioxidants.
  • They may improve digestive health, blood levels of heart-healthy omega-3s, and risk factors for heart disease and diabetes.
  • Chia seeds are small, flat, and ovular with a shiny and smooth texture. Their color ranges from white to brown or black.
  • These seeds are highly versatile. They can be soaked and added to porridge, made into pudding, used in baked goods, or simply sprinkled on top of salads or yogurt.
  • Because of their ability to absorb liquid (10 to 12 times their size) and form a gel, they can also be used to thicken sauces or as an egg replacement.

Ingredients

  • 3/4 cup of chia seeds

  • 4 cups of water

  • 1 teaspoon of cinnamon

  • 9 dried mission figs (or fresh figs or dried fruit of choice)

  • 1 teaspoon vanilla

  • 2 tablespoons of maple syrup

Directions

  • Cut 6 dried figs into several slices.
  • Mix the chia seeds, water, cinnamon, figs, vanilla and maple syrup. Stir until well incorporated.
  • Cover and refrigerate for one hour or overnight.
  • Stir the chia pudding and serve, topping with a sliced dried fig.
  • I like to layer this with greek vanilla yogurt or yogurt of choice for the higher protein and healthy probiotics!
