Garlic Cauliflower “Mashed Potatoes”

A low carb substitute for mashed potatoes that make a delicious side dish that’s low calorie and high fiber. The garlic butter gives it a wonderful flavor.

Let’s be real, I won’t tell you these taste like mashed potatoes so don’t be expecting that. I LOVE my mashed potatoes but I also love mashed cauliflower. Mashed cauliflower is a delicious side dish that needs to be appreciated as it is! These are low carb, low fat & low calorie and make a wonderful side dish where you would serve mashed potatoes. It’s an easy, fun way to get more vegetables in your diet.

I used riced cauliflower for the convince of just microwaving it in the bag. You can buy a head of cauliflower and cut it into florets and then steam the florets about 8-10 minutes until tender.

Serve with…

Juicy Pork Chops, chicken, hamburger steaks, etc.

A delicious, low calorie, side dish & great way to get in your vegetables!

Ingredients

  • 2 (12 oz) bags of riced cauliflower

  • 1 tablespoon of butter

  • 1 tablespoon minced garlic

  • 3/4-1 cup of chicken stock (or milk)

  • 1 teaspoon salt or to taste

  • 1/4 teaspoon pepper or to taste

  • Chives for serving

Directions

  • Microwave the riced cauliflower according to package directions.
  • While the cauliflower is cooking, melt the butter into a small pot.
  • Add the garlic to the pot and cook for one minute, stirring often. Remove from heat.
  • Add the cooked cauliflower and the rest of the ingredients to a blender. Pour in the garlic butter (Do this in batches if you have a small blender).
  • Puree, starting on low speed and increasing the speed slowly.
  • Return the mashed cauliflower to the pot and keep warm.
  • Optional to serve with diced chives and butter.
