This soup is delicious. It’s not one of those “Oh it taste pretty good to be healthy” types of meals. It’s a delicious, flavorful broth packed with healthy ingredients that will have you looking and feeling your best. It’s simple and quick to make.
Soups and stews are my favorite meals to make. They are always so tasty, usually cooked in one dish, & I don’t have to worry about putting a meal with sides together. I love how you can pack so many healthy vegetables into one big pot.
Healthy Ingredients
This soup is made with turkey sausage, onion, garlic, carrots, broccoli, Great Northern beans, & chicken stock. I originally wanted to use kale or spinach in this soup but I didn’t have any so I used broccoli and it turned out fantastic. Feel free to add greens instead of broccoli or add both!
I used canned Bush’s Great Northern Beans. A 1/2 cup serving has 100 calories, 7 grams protein, 6 grams fiber, 19 grams carbs and 0 grams of fat. I thought Garbanzo Beans (chickpeas) would be the superior choice nutritionally but 1/2 cup serving has 120 calories, 6 grams protein, 4 grams fiber, 20 grams carbs and 2 grams fat. You could use Navy Beans or Cannellini Beans for a similar taste.
What Type of Meat Should I Choose?
I use turkey sausage in this soup because I think it taste almost just as delicious as pork sausage in soups. You can use regular pork sausage but it will be higher in fat and lower in protein. You could also use 96% lean ground beef or even ground or shredded chicken.

A delicious broth packed with healthy ingredients!
Ingredients
1 pound Turkey Breakfast Sausage (I like Jennie-O hot turkey)
1 Onion
2 Tablespoons Minced Garlic
16 Ounces Frozen Broccoli
2 Cups of Matchstix Carrots
2 (15.8 oz) cans of Great Northern Beans (Do not drain)
4 Cups of Chicken Stock
4 Cups of Water
2 Tablespoons Italian Seasoning
2 Bay Leaves
1 Tablespoon of Salt (or to taste)
1 Teaspoon Black Pepper
1 Teaspoon Crushed Red Pepper Flakes
1 Tablespoon of Olive Oil or Bacon Drippings (optional for taste)
Directions
- Brown sausage in a large soup pot with a lid. If there is excess water in the pot, strain before adding the onion.
- When sausage is almost cooked through, stir in the onion. Cook about 5 minutes.
- Stir in the garlic and cook one minute longer.
- Stir in the remaining ingredients and bring to a boil.
- Cover and reduce to a low simmer. Simmer for 30 minutes. Keep warm until ready to serve.
