An easy, delicious corn side dish that is perfect for your Holiday table!
This dish goes by many names: corn casserole, corn pudding, spoon bread or corn soufflé. It’s a mix between a cornbread and like a corn “bread pudding.” It’s savory, mildly sweet from the Jiffy mix and it’s a family favorite!
Eggs?
You can add no eggs or 1 to 2 eggs for a lighter, more cake-like consistency. I added one egg but I next time I won’t add any eggs as I like it to be more pudding like especially for Thanksgiving when bread and dressing are being served as well. If you are serving this with a meal that doesn’t have any type of bread dish then adding the eggs would be a great idea!
Baking Pan Size
If you double this recipe use at least a 9×13 baking dish. You can make this recipe in an 8×8 baking dish for a thick corn pudding or a 9×13 for a thinner pudding. It will bake faster in a 9×13 dish so check it at about 30 minutes.
Make Ahead
You can make this the night before without baking it and cover and refrigerate. The next morning take it out of the refrigerator and let it sit for 30 minutes then bake. It may take 10-20 minutes longer to bake since it will be colder.
Optional Mix Ins:
- A can of drained green chiles
- Sautéed onion & peppers
- A can of Mexican corn instead of the whole kernel corn
- Crumbled bacon
- Shredded cheese
- 2 Tablespoons of sugar

Ingredients
1 (8.5 oz) box of Jiffy corn muffin mix (or other corn muffin mix)
1 cup of Sour Cream
0-2 eggs (eggs make it more cake-like)
1 (15 oz) can Whole Kernel Corn, drained
1 (15 oz) can Cream Style Corn
1 stick (1/2 cup) of melted Butter
Directions
- Preheat oven to 350*.
- Lightly spray an 8×8 baking dish or you can use a 9×13 baking dish for a thinner casserole.
- Beat you eggs then stir together all the ingredients saving the butter for last.
- Pour the batter into the baking dish and bake for 35-45 minutes until light golden bread and center is set.
