Stephanie Nuce’s Kale Superfood Salad

My friend, Stephanie Nuce, taught me how to make this recipe on Season 2 of my cooking show “Southern Fried Skinnyfied.” It’s delicious and it’s packed with nutrient dense foods. We served this as a side to our BBQ. You can watch a clip of the episode below the recipe!

I was watching a cooking show the other day and I saw a technique for softening kale. It would be a bit easier than massaging the kale for so long (my hands get tired…maybe I massage too hard haha). Bring a pot or kettle of water to a boil. Place your chopped kale leaves in a colander. Pour the boiling water over the kale then poor ice water over it to stop the blanching process. It turns it a vibrant green color and softens the leaves. Then proceed through the recipe directions but you don’t have to massage it!

Ingredients

  • 3 Large bunched of Kale chopped and destemmed

  • 1 cup Raw pumpkin seeds

  • ½ cup Extra virgin olive oil

  • ¼ cup Balsamic Vinegar

  • 1 tablespoon of honey

  • 1 lemon

  • 1 cup dried cranberries

  • Shredded parmesan cheese *optional

  • 1 or 2 carrots shredded

  • Salt and pepper

  • Other optional toppings: cherry tomatoes, avocado, apple slices, bell pepper, etc.

Directions

  • Add kale to a large bowl and drizzle a little olive oil over it
  • Add the juice of one lemon to the bowl and a pinch of salt
  • Vigorously start massaging the kale. Squeeze hard for about 3-5 minutes until the kale feels tender and doesn’t taste bitter
  • Add the cranberries, carrots, cheese if using, and pumpkin seeds (plus any other toppings you want) to the bowl and toss
  • In a mason jar mix the olive oil, balsamic vinegar, honey and a pinch of salt and pepper. Screw the lid on and shake until mixed.
  • Pour desired amount of dressing over the salad and enjoy!
