Dianne Linderman’s Healthier Chicken Fried Steak & Mashed Potatoes.

Chicken fried steak is a classic, a staple in Texas diners & southern kitchens. My cowboy said this is one of the best chicken fried steaks he’s ever tasted.

Chicken fried steak is made with cube steak, an inexpensive, already tenderized cut of beef. It’s then breaded and fried much like you would a piece of chicken.

This recipe from Dianne Linderman, of our local Dianne’s Diner, is fantastic! You taste the steak, not just the fry & breading. The mashed potatoes are wonderful, easy and have that delicious sour cream flavor. The gravy is so creamy, without any flour added. My favorite part besides eating it is that it’s made with healthy whole wheat pastry flour, coconut oil & cream, and greek yogurt.

I love a good chicken fried steak but I never order one because of how unhealthy they generally are. The steak & the gravy is usually 1,000 calories or more and that’s not including the mashed potatoes.

Ingredients

  • Chicken Fried Steak
  • 1/4 cup Coconut Oil

  • 4 Cube Steaks

  • 1/4 cup Whole Wheat Pastry Flour (Use almond flour to make gluten free)

  • Garlic Salt and Pepper, to taste

  • Mashed Potatoes
  • 2 lbs. Red Potatoes

  • 1/2-1 cup Plain Greek Yogurt or Sour Cream

  • 1-2 tablespoons of butter (of more if you aren’t watching calories/fat)

  • Salt & Pepper, to taste

  • Cream Gravy
  • The juice from cooking steak

  • 1/2 cup Coconut Cream (Use canned Thai Coconut Milk. Do not shake can, use the cream that rises to the top of the coconut milk.)

  • Garlic Salt and Pepper, to taste

Directions

  • Chicken Fried Steak
  • Heat coconut oil on high in frying pan.
  • Dredge both sides of steaks in flour.
  • Season with garlic salt and pepper on both sides.
  • Place steaks in frying pan and brown each side about 4-5 minutes each side. You can tell the steaks are done when you see the juices seeping from the top.
  • Mashed Potatoes
  • Cut potatoes into cubes leaving the skin on.
  • Place in a pot, cover with water and boil until soft, but not falling apart about 15-20 minutes.
  • Drain potatoes.
  • Add plain Greek yogurt (or sour cream), butter, garlic salt and black pepper to taste.
  • Mash the potatoes with a potato masher or whisk, being careful not to over-mash which causes potatoes to become sticky.
  • Add garlic salt and pepper to taste.
  • Gravy
  • Leave the juice from the steaks in your skillet.
  • Stir in coconut cream, garlic salt and pepper.
  • Whisk on medium heat until sauce thickens.

  • Based on 4 large servings, there are 204 calories in the mashed potatoes made with 1/2 cup greek yogurt and 1 Tablespoon butter (8.1 G protein, 3.2 g fat, 37.6 g carbs).
  • Based on just the coconut cream (hard to calculate the oil and steak juices but that’s included in the cube steak nutrition) there are 69 calories in the gravy. With .7 G protein, 7.2 g fats, 1.7 g carbs.

    I know Southern cooking screams fat but I love it! I am however on a 40g fat a day diet for my liver, so can you help me with some options that are low or little fat?

     
    • Hey!! Yes lots of my recipes are low fat and use lean ground beef etc! I’ll have to add some tags for low fat options!
