Apple Spiced Oatmeal Recipe

I love the smells of fall and love a good, warm bowl of oatmeal. Not the mushy, instant kind, but the oats with a slightly chewy texture.

Rolled oats or steel cut oats have the best texture. I use rolled oats in this recipe because they cook a bit faster than steel cut oats. If you use steel cut oats use the amount of water and oats according to the package directions for two servings. This recipe is a fun way to get your fruit & oats with the warming aroma of cinnamon & spices filling the kitchen.

Oats are among the healthiest grains on earth. They are a great source of healthy carbs (your body and brain’s preferred source of energy) and fiber. They are heart healthy, can lower cholesterol, control blood sugar, and help with weight loss. You can sweeten this with stevia for an added-sugar free option or you can sweeten with maple sugar, honey, or apple butter!

Ingredients

  • 1 tablespoon of butter

  • 2 cups of water

  • 1/8 tsp salt

  • 1 cup of rolled oats

  • 1/4 cup of diced apple (I like honey crisp)

  • 1 teaspoon pumpkin pie spice

  • 2 tablespoon maple syrup, honey, brown sugar, apple butter or a packet of stevia (or sweetened to taste)

  • Optional Toppings
  • More Maple Syrup or Brown Sugar

  • Butter

  • Pecans

Directions

  • Melt butter in small pot over medium heat.
  • Stir in apple and pumpkin pie spice. Cook for about 2 minutes.
  • Stir in the remaining ingredients and bring to a boil.
  • Turn heat down to low and cook until oats are done, about 10-15 minutes.
  • Serve with toppings of choice.
